Tasty Tuesday: Pear Salad

This is my tastiest Tasty Tuesday yet, friends! I stumbled upon this amazing recipe on pinterest the other day, and I’m so glad I did! It’s fresh and quick, and has the most unique pairing of ingredients. You’ll find the recipe after the photos:)

Pear Roquefort Salad, adapted from Verses from my Kitchen, a most beautiful food blog that I am totally inspired by! Check it out!

Ingredients:

  • 2 pears, thinly sliced (using a mandoline..I didn’t have one, so mine were cut imperfectly!)
  • 1/2 apple, thinly sliced (using a mandoline)
  • 100 grams Roquefort (I used Blue Cheese), crumbled
  • 1/4 cup watercress leaves
  • 2 tbsp. pistachios, roughly chopped
  • sea salt and cracked fresh pepper, to taste
  • FOR THE DRESSING:
  • 1/3 cup sour cream
  • 1 1/2 tsp. white wine vinegar
  • 2 tbsp. mayonnaise
  • pinch of salt
  • 1 garlic, turned to paste (I used garlic powder)
  • 1 cup Roquefort cheese
  • 2 cranks on the pepper grinder

Prep:

  1. Using a mandoline, thinly slice pears and half an apple. Place in a bowl of water with a few tablespoons of lemon juice to prevent browning and keep aside.
  2. In a medium bowl, combine all the dressing ingredients and whisk until smooth.
  3. For plating, stack the pear slices one atop of the other, with a couple apple slices added in. Dress with watercress leaves and chopped pistachios over top and along the sidesĀ and crumble Roquefort cheese over top. Lightly pour dressing over top and around the stacked pears. Season.
  4. Serves 2.

Everything in this post looks so yummy, roses & cookies!! I will have to try those sandwich cookies – my husband and I both love red velvet! 100 roses? Love it!

Tasty Tuesday

I’ve always loved ways to jump-start my morning, whether it’s a long brisk run, a hot shower…

or a green monster smoothie!

Yes, that’s right, you would never imagine these ingredients in a smoothie, right?!

Simply mix together a few spoonfuls of plain greek yogurt, an apple (skin and all) and a kiwi (definitely not the skin!), a handful of spinach and about 1/4 cup of almond milk. I also added a scoop of my favorite protein powder for some extra energy.

Delicious! Yes it is a bit odd to drink spinach, but trust me – it’s tasty! And oh so healthy:)

mmmm…..love these Tasty Tuesdays of yours!! And I will definitely be giving this one a try! I’m all about fast, healthy and yummy! What do you use for your smoothie? A Vitamix or Blendtech or something fancy like that? Thinking about investing in one, but not sure which to get yet…. =)

I love green smoothies! Adding ice takes it to a whole new level of yumminess. Berries are also a fabulous addition. I like your Tasty Tuesday idea, very fun!
